White Chocolate Gâteau Recipe

I do love a good gâteau but I have never got around to making one...until now! The only thing I would say is that this one was quite dry if you didn't eat it with cream or ice cream. But then again that could just be my dodgy baking skills! 

Ingredients 
90g (3oz) butter, melted and cooled
6 large eggs
175g (6oz) caster sugar
125g (4oz) self-raising flour
30g (1oz) cocoa powder
2 tbsp cornflour 
Filling and topping
300ml double or whipping cream, whipped until thick
White and/or milk chocolate curls 

                                          Method
1. Lightly butter a 23cm round cake tin and line with backing parchment 

2. Put the eggs and sugar into a large bowl and mix together with an electric mixer until the mixture is light in colour and thick enough to leave a trail on itself when the whisk is lifted out. 

3. Sift together the flour, cocoa powder and cornflour, before folding half into the egg mixture. Pour half of the cooled butter around the edge and fold in as well.

4. Repeat with the remaining flour and butter mixtures, remembering to fold gently.

5. Pour into the prepared tin and bake in a preheated oven at 180 °C (350 °F, Gas 4) for 35-40 mins or until the sponge has risen and firm to touch. Turn out, peel of the parchment and leave to cool. 

6. Carefully cut the cake in half horizontally and sandwich the layers together with plenty of whipped cream. Cover the cake with a thin layer of cream, then pipe the remainder around the top edge. 

7. Press the chocolate curls onto the sides and top of the cake, and enjoy
